BEST EVER White Chocolate Popcorn

I originally posted this recipe back in 2011 and it is still one of my family's favorite treats, so it was time to update the pics and share with all of you again.

The flavor of this really is amazing thanks to the type of popcorn the recipe calls for.  It's also so easy to customize for each holiday by switching out the M&M's you use.

Check out my original post down below.
If I would have seen this recipe on a blog, I probably would have just passed by it, but lucky for you, my boss makes it for us every year for Christmas, so I know how amazing it is.

I was making this a few days ago when Jake comes into the kitchen and says:

"Ewe, why did you use buttered popcorn?"

I said "Don't knock it until you try it."

So . . . he takes a bite . . . takes another bite . . . gets out a bowl and fills it up . . . finishes the bowl and says . . .

"What is this stuff?  Why is it so good and why can't I stop eating it?"
So, there you have it.  This stuff is seriously AMAZING AND ADDICTING!  Neither of us have been able to stop eating it for the past three days.  I know it sounds strange, but it works.

STOP whatever you are doing . . . Get up . . . Get dressed . . . go to the store and get some buttered popcorn, white chocolate candy melts and some M&M's and MAKE THIS RIGHT NOW.

BEST EVER White Chocolate Popcorn
adapted from: Diana J.

3 bags (regular-size) Extra Butter Microwave Popcorn
1 1/2 (12 oz.) bags Wilton White Candy Melts
or 1 Lb. White Chocolate Almond Bark
1 (11.4 oz.) bag regular M&M's or 1/2 bag mini M&M's

Pop popcorn in the microwave, DO NOT BURN IT.  Transfer to a really large bowl, making sure to get out all of the un-popped kernels so no one breaks their teeth.  Melt white candy melts according to package directions.  Pour over popped popcorn and add M&M's.  Stir until all of the popcorn is coated with chocolate.  Let set until chocolate has hardened.  When chocolate has hardened, the popcorn will be stuck together in one large ball.  So, use a spoon to break it into chunks.  Store in an air-tight container.  Serve.

Jenn's Notes: You can find the Wilton White Candy Melts in the craft section at Walmart or at Craft Stores (Hobby Lobby or Michael's).  This popcorn is a great neighbor gift. Add to cute cellophane bags and tie with a ribbon.  If you burn the popcorn, don't think the white chocolate will hide the burnt taste, because it won't.  If you burn it, throw it out and use a different bag.

Melt in Your Mouth Symphony Fudge

This fudge is DIVINE.  It's so smooth and creamy and really just melts in your mouth.  The flavor is outstanding.  I used the blue Symphony Bars for the chocolate and toffee flavor, so not only is it fabulous from that, but it also has marshmallows in it which give the fudge a slight toasted marshmallow flavor too.

This is the kind of fudge that I should definitely share with other people.  Otherwise, I'll just keep going back for piece after piece and I can't stop.  I am seriously a big fan of this fudge and I love that it's so simple to make.   Today is day four and the fudge is still as smooth and creamy as ever.

I hope you all have a wonderful Christmas and are able to spend it with friends and family.

Melt in Your Mouth Symphony Fudge
adapted from: Tips from a Typical Mom
(Printable Recipe)

2 c. heavy whipping cream
4 c. sugar
3 (4.25 oz.) Symphony Bars (milk chocolate bar with almonds and toffee)
2 sticks (16 Tbl.) unsalted butter, cut into cubes
1 c. mini marshmallows
2 tsp. vanilla

Line a 9x13-inch pan with parchment paper and lightly spray with cooking spray; set aside.  Add whipping cream and sugar to a large saucepan and whisk until combined.  Make sure to use a large pan or your mixture will boil over.  Heat over medium heat, stirring frequently, until mixture comes to a boil.  Let the mixture boil for 10 minutes and DO NOT STIR WHILE BOILING.

Meanwhile, to the bowl of a stand mixer (or large bowl), break up the candy bars and add to the bowl along with the cut up butter, marshmallows and vanilla.  After the sugar mixture has boiled for 10 minutes, remove from heat and carefully pour over the chocolate mixture in the bowl.  Do not scrape the edges of the pan (we don't want sugar crystals in the fudge).  Start mixer on low speed and gradually work your way up to medium speed.  Mix until everything is well combined and mixture is smooth and starts to lighten in color.

Pour into prepared pan and spread out evenly.  Allow to cool for one hour, then cover and refrigerate until completely cool.  Cut into squares and serve.  I like to store the leftover fudge in the refrigerator and then bring it to room temperature before serving.

Birthday Cake Muddy Buddies

Meet my new current obsession . . . Muddy Buddies.  Can you believe that I had never had Muddy Buddies until my friend, Shanelle, brought these into work one day?  Sure, I have seen Muddy Buddy recipes all over the place, but they didn't sound that amazing to me.  Boy, was I so wrong.  I have been missing out - BIG TIME.

I seriously LOVE these Birthday Cake Muddy Buddies.  The flavor, the texture, the pretty sprinkles and everything.  White chocolate covered cereal and marshmallows that are coated in a combination of powdered sugar and cake mix and finished off with some rainbow sprinkles . . . BEST TREAT EVER :)  The addition of marshmallows is genius and when the soft and chewy marshmallows are mixed with the crunchy cereal and creamy white chocolate, it is sooooo addicting.
I could not stop eating this incredible treat.  It makes a really big batch, so if you are making this, you might want to plan on sharing with a lot of people, because you will want to eat the entire bowl.

What is your favorite flavor combination of Muddy Buddies?  I am dying to try out more versions.

1/2 (10 oz.) bag mini marshmallows, or more if desired
1/4 c. rainbow sprinkles

Combine powdered sugar and cake mix and gradually add to cereal mixture while the white chocolate is still wet.  Stir together until all the cereal and marshmallows are evenly coated in sugar.  You may or may not use all of the powdered sugar mixture.  Add enough until the cereal is coated to your preference.  Allow white chocolate to set and serve.

Mom's Coconut Almond Chex Mix {Best Ever}

My Mom has been making this chex mix for as long as I can remember.  She usually only made it a few times a year, but one of those times was always on New Year's Eve.  It makes a ton, so it's great to take to a party.

Friday night, I got home from work, put on my comfortable clothes and was ready to relax for the night, when my hubby really really wanted some of this chex mix.  So, we headed to the store to buy the cereal.  I usually have most of the other ingredients on hand.

By the way, what is up with cereal?  The boxes are getting smaller and the prices are getting higher, same thing that I complain about with chips.  What they call "Party-Size" is pretty much what regular-size used to be.  Anyway, my Mom's recipe calls for a 1/2 a box of golden grahams, but since cereal box sizes are completely different than they used to be, we had to decide how much was the perfect amount.
Within a few minutes of getting home from the store, we had a big bowl of this super addicting, BEST EVER, chex mix finished and ready to eat.  When I say it's addicting, it totally is.  Once you start eating it, it's so hard to stop.  The flavor and texture are so satisfying.  Everything you want in texture, is in this chex mix . . . crunchy, creamy and chewy all at the same time.  This is guaranteed to become a family favorite.

White Chocolate Corn Pops

Tomorrow is the first day of Spring.  The last few days have been so warm and it's so nice to be outside all day, rather than stuck inside.  It was so nice outside, that I was able to take my kitchen table out and re-finish it.  I don't know what the deal was, but it was having some issues.  I could not get it to come clean.  It was sticky.  If you set a paper plate on it with warm food, the steam would pretty much "glue" the plate to the table.  SO gross and it has been driving me nuts, so we sanded it and stained it and I can't wait to try it out.  We have to wait 24 hours before we can set anything on it.

With all this warm Spring weather, a fun colorful snack is much needed.  These White Chocolate Corn Pops are so simple to make and so addicting.  You will find yourself going back for bite after bite.  Basically there are only two ingredients or three if you add sprinkles.

First, you will need a bag of Corn Pops, not the cereal, but the kind that is pictured above.  You should be able to find it in the chip aisle at your grocery store.  Then, you need two bags of white chocolate chips.  Melt the white chocolate chips and pour over the corn pops until well coated and top with sprinkles.  Allow to harden and that is it.  It doesn't get much easier than this.  I was thinking some chopped up candy bars would also be fantastic and I might have to try that next.  It makes a lot, so it's great for sharing.  My friend, Mary, brought this into work one day and everyone had to have the recipe.

Place the corn pops in an extra-large bowl or divide them between two large bowls.  In a separate medium-large microwave safe bowl, microwave the white chocolate chips until melted, stirring every 30 seconds.  Pour melted white chocolate over the corn pops and stir until evenly coated.  Top with sprinkles or chopped candy bars, if adding.

Spread out onto wax paper and allow white chocolate to set.  Or, you can leave it in the bowl and it will stick together in chunks, so whichever you prefer.  When white chocolate has hardened, serve.  Store in an airtight container.

Chocolate Coconut Bars

I am officially done with my Christmas shopping and it feels so good.  It's crazy to think Christmas is only one week away and that it will be a new year soon.  What has been your favorite goodie you have had this holiday season?  I love it all . . . fudge, sugar cookies, brittle, toffee, cheeseballs, you name it, BUT if you want to try something different, yet still extremely delicious, these bars are a great choice.

This recipe instantly caught my attention because there are only a few ingredients needed, most of which I usually have on hand.

This is one of those treats that would make a great addition to a holiday cookie platter and it's one that you could make a few days in advance.  The flavors are incredible and the texture is perfect with the snap you get when you bite into the chocolate, followed by the creamy coconut filling and the crisp graham cracker crust.  Easy to make and super yummy.

Preheat oven to 350 degrees.  Grease a 9x13-inch baking pan and line with parchment paper; set aside.  Mix graham crackers, butter and sugar together and press into prepared baking pan.  Bake for 7 minutes.  Remove from oven and sprinkle coconut evenly over the hot crust and pour the sweetened condensed milk over the top.  Return the hot pan to the oven and bake for 15 minutes.

Remove from oven and sprinkle the chocolate chips over the top.  Allow to sit for a few minutes or until the chips are soft.  Spread chocolate evenly over the coconut filling.  Allow the chocolate to set up and cut into bars.  This can be refrigerated to help the chocolate set.

Cinnamon Sugar Candied Nuts (Almonds, Pecans, Walnuts)

My parents have a huge black walnut tree in their backyard.  This year we picked up big storage tupperware bins full of walnuts.  We have bins and bins of walnuts.  BUT, the thing is, you have to crack each walnut shell to get out a walnut.  Lots of work.  I had no idea it took so much effort and hours of work just to get a zip-lock bag full of walnuts.  I can now understand why they are so expensive to buy in the grocery store.

I love snacking on nuts and what's better than cinnamon sugar candied nuts?
Cinnamon almonds are to-die-for and every time I walk through the mall this time of year, the smell of those almonds is irresistible.  BUT, they are a little pricey, so, I figured why not make my own candied nuts and use up some of these walnuts I have along with some of my other favorite nuts.

These nuts turned out fantastic.  A great snack to have on hand or they are a great neighbor gift.  Your house will smell amazing while they bake.

Let me show you how easy they are to make . . .
Combine egg white, water and vanilla and whisk with a fork until frothy.
Add the nuts.
Combine sugar, brown sugar, cinnamon and salt and add to bowl with nuts.
Stir everything together until well combined.
Spread out onto a baking sheet that has been lined with parchment paper and sprayed with cooking spray.  Bake for one hour, stirring every 15 minutes and that's it.

See how easy they are to make at home?  Save yourself some money and skip the lines at the mall and make your own cinnamon sugar nuts.

They are absolutely delicious and hard to stop eating.

(Printable Recipe)

1 large egg white
1 Tbl. water
1 tsp. vanilla
3/4 c. sugar
1/4 c. light brown sugar
2 tsp. cinnamon
1/2 tsp. salt
3 c. nuts (almonds, pecans, walnuts, etc. . . )

Preheat oven to 250 degrees. In a large bowl, combine egg white, water and vanilla and whisk together with a fork until frothy.  Add the nuts to the bowl.  Then, in a separate small bowl, combine the sugar, brown sugar, cinnamon and salt and add to the bowl with the nuts and egg mixture.  Stir mixture together until well combined.  Spread out evenly onto a large baking sheet that has been lined with parchment paper and sprayed with cooking spray.

Bake for 60 minutes, stirring every 15 minutes.  The parchment paper will want to slide a little bit when you stir the nuts, but when it's time to clean your pan, you will be glad it was lined with parchment.  When done baking, remove from oven, cool and serve.
