White Chocolate Raspberry Cookies

Yesterday was the first day of Fall!! This is the absolute best time of the year.  While everyone is sharing delicious Fall recipes like anything with pumpkin, apples or homemade soup, I have one last fruity recipe to share with you.
This is an easy shortcut recipe that can be made any time of the year.

I have been craving fresh raspberries lately.  I love that tart, yet sweet flavor.  Have you every put fresh raspberries on homemade vanilla ice cream??? Seriously - best ever!
These cookies start out with a cake mix and pudding mix, so they are pretty much guaranteed to be soft and chewy.  I added some raspberry extract to both the cookie and the icing to give them that extra boost of flavor.  I also used raspberry puree in the icing, but you can always use raspberry jam.  I just happened to have a giant bottle of raspberry puree that I bought to flavor my Diet Mountain Dew.

These cookies are delicious.

(Printable Recipe)

1 (16.25 oz.) box white cake mix
1 (3.4 oz.) box instant white chocolate pudding mix
1/2 c. canola or vegetable oil
2 large eggs
1 tsp. raspberry extract, opt.
1 bag white chocolate chips (about 2 cups)

Raspberry Icing
1 1/2 c. powdered sugar
3-4 Tbl. raspberry puree or raspberry jam
1-3 Tbl. milk, as needed
pinch of salt
1 tsp. raspberry extract, opt.

Combine cake mix and dry pudding mix in a medium bowl.  Add the oil, eggs and raspberry extract and mix until combined.  Stir in the white chocolate chips.  Chill in the refrigerator for at least and hour or up to 24 hours.  Roll into balls (I use a cookie scoop).  Bake in preheated 350 degree oven for 10-12 minutes.  Remove from pan and let cool, then top with icing.  Makes around 28 cookies.

For the Raspberry Icing: Combine powdered sugar, raspberry puree, 1 Tablespoon of milk, salt and raspberry extract and stir until smooth.  If it's too thick, add a little more milk until it reaches an icing consistency.  Drizzle over cooled cookies.

Chocolate Confetti Chip Cookies

I found the funnest thing when shopping at Walmart the other day.  Confetti Chips!  They are so cute. . . speckled white chips that almost taste like cake batter.  Of course, I bought two bags and immediately made some cookies.

I used my current favorite chocolate cookie recipe.  These cookies are soft and chewy with the perfect touch of chocolate.
I love this recipe, not only does it always produce delicious cookies, but I always have the ingredients on hand.  Plus, this recipe makes a bunch of cookies, so there is always plenty to share. However, if you don't want that many cookies hanging out in your kitchen, then you can easily cut this recipe in half.

Next time you are at the store, pick up a bag of this fun confetti baking chips and make yourself a batch of cookies.

2 1/4 c. all-purpose flour
3/4 c. unsweetened cocoa powder
1 tsp. baking soda
1 tsp. salt

Nutella No Bake Cookies

This recipe is back from 2012.  I decided it was overdue for some updated pics and since I make these all the time, I wanted to re-share them with all of you.

Here is my original post:
No Bake Cookies are one of those cookies that I could eat EVERY SINGLE DAY.  I have been eating them as long as I can remember and I still have never gotten sick of them.  The funny thing is, that I had been craving no-bakes for the past few weeks, but I never made them, because I thought - no one wants to see the same old no bake recipe.  Then, last night I found NUTELLA NO BAKE COOKIES.  For real!!!
What a fun twist on an old classic.  I crossed my fingers that I still had enough Nutella left in the jar - oh and I did, but only for a half a batch.  But hey, better than nothing.  They turned out delicious.  So creamy and chewy just how I like them.  We ate these things so fast and I only have one left.  These are super yummy.

1/2 c. milk
1/2 c. butter
1 tsp. vanilla
pinch of salt
1/4 c. creamy peanut butter
1/4 c. Nutella
3 c. quick-cooking oats

In a medium saucepan, combine the sugar, cocoa powder, milk and butter.  Cook over medium heat, stirring until the butter is melted and sugar is dissolved.  Bring to a boil.  Remove from heat and stir in the vanilla, salt, peanut butter and Nutella.  Last, stir in the oats and quickly drop by spoonfuls onto wax paper.  Allow to harden and enjoy.

Chocolate Peppermint Cookies

You guys . . . EVERYONE needs this chocolate cookie recipe.  It is such a good cookie.  Thick, rich, chocolaty, fudgy, chewy and delicious.  Pretty much everything you could ask for in a chocolate cookie is covered in this recipe.  Plus, you don't even have to chill the dough.  You can make and bake them right away.

These are definitely one of my favorite cookies that I have made this year.  The cookie on its own is perfect, but I was really craving some creamy frosting, so I covered these amazing cookies with a Vanilla Bean Cream Cheese Frosting and to make them extra special for the holidays, I topped them with crushed peppermint candy canes.
I cannot get enough of these cookies and my whole family loves them.

I have now been eating these for three days and they are just as good as on day one.  Make sure to store them in the refrigerator since there is cream cheese in the frosting.  You can either bring them to room temperature before eating or eat cold, straight out of the fridge.  Both ways are incredible.

Glazed Toffee Bonbons

What are your favorite cookies to make during this time of the year?  I love Red Velvet Sandwich Cookies and Chocolate Crinkle Cookies dipped in white chocolate and crushed candy canes, but I've decided to try out some new cookie recipes this month.

These Bonbons are the first unique recipe I decided to try.  What is it about mini cookies that are so irresistible?  These little bite-sized cookies are absolutely delicious.  The cookie is soft and chewy and to make them over the top, they are covered in a rich caramely glaze, a white chocolate drizzle, a chocolate drizzle and chopped toffee candy.  These cookies are rich, but I didn't find them too sweet.  You can easily eat more than one in the same sitting.
I think you and your neighbors will love these special little cookies.

(Printable Recipe)

1/2 c. unsalted butter, room temperature
1/2 c. light brown sugar, packed
1 tsp. vanilla
1 large egg
1 3/4 c. all-purpose flour
1/4 tsp. baking soda
1/4 tsp. salt
3 bars (1.4 oz. each) chocolate-covered English toffee candy, finely chopped

Glaze
1/4 c. unsalted butter
1/2 c. light brown sugar, packed
2-3 Tbl. milk
1/2 tsp. vanilla
1 1/3 c. powdered sugar
1/3 c. semi-sweet chocolate chips
1/3 c. white chocolate chips

Preheat oven to 325 degrees.  In a large bowl, cream together butter and sugar.  Mix in the vanilla and egg until smooth and creamy.  Add the flour, soda and salt and mix until just incorporated.  Reserve 1/3 of the chopped candy for garnish.  Stir remaining chopped candy into the dough.  Shape dough into 1-inch balls and place on a greased baking sheet, 1-inch apart.  Bake for 11 minutes or until edges start to brown.  Place a cooling rack over a piece of wax paper and immediately remove cookies from cookie sheet to cooling rack.  Bake remaining dough.

Meanwhile, prepare the glaze.  In a medium saucepan, heat butter, brown sugar, 2 Tablespoons of milk and vanilla over medium-low heat.  Stir frequently until mixture just comes to a boil and sugar is dissolved.  Stir in powdered sugar and whisk until smooth.  If glaze is too thick, add remaining milk.  Immediately dip tops of cookies into glaze (be careful, the glaze is hot).  Cookies don't have to be completely cooled, just firm and set.  Place on cooling rack.  If glaze starts to set in saucepan, reheat over medium-low heat and beat with a whisk until softened.

Place chocolate chips and white chocolate chips in separate small, microwave-safe, bowls.  Microwave one at a time for 1-2 minutes, stirring every 30 seconds, until chocolate is melted and smooth.  Drizzle over cookies (I like to use a fork to drizzle the melted chocolate).  Repeat with white chocolate chips.  Top with reserved crushed candy before the chocolate sets.  Allow to set and serve.  Makes around 2 1/2 dozen cookies.

S'mores Pumpkin Cookies

I am so happy it's September.  The next few months are my favorite time of the year.  This Summer has felt extra hot to me, so I am ready for the weather to start cooling down.

Do you save up pumpkin recipes all year long and can't wait to start baking them in the Fall?  I usually have a bunch of recipes saved up and I always have one on the top of my list that is the 1st thing I can't wait to make.  This year, I didn't have a list, but when I first saw someone post about Hershey's new S'mores Baking Pieces, I immediately knew I wanted to add them to my go-to pumpkin cookie recipe.
Since this is a newer product, you might not be able to find it at all grocery stores.  I was able to find mine at my local Walmart and they had a bunch.  Inside the package you get mini graham cracker squares, marshmallows and chocolate chips.  The marshmallows are tiny and crunchy, but when you bake them they soften and puff up just like a regular marshmallow.

These cookies turned out so good.  The pumpkin cookie is thick and soft and when mixed with the creamy chocolate chips, toasted marshmallows and crunchy graham pieces it's the perfect cookie to welcome in September.

1 c. canned pumpkin puree
1 c. sugar
1/2 c. vegetable oil
1 large egg
2 c. all-purpose flour
2 tsp. baking powder
2 tsp. cinnamon
pinch of nutmeg
1/2 tsp. salt
1 tsp. baking soda
1 tsp. milk
1 Tbl. vanilla
1 (7 oz.) pkg. Hershey's S'mores Baking Pieces

Preheat oven to 350 degrees.  In a large mixing bowl, combine pumpkin puree, sugar, oil and the egg and mix until well blended.  In a separate bowl, combine the flour, baking powder, cinnamon, nutmeg and salt; add to wet mixture.  Dissolve the baking soda in the milk and add to the wet ingredients along with the vanilla.  Mix all together until just combined.  Stir in just over half of the baking pieces and save the rest for pressing on top of cookies before baking.

Using a 1 1/2 Tablespoon cookie scoop, drop dough onto a large cookie sheet that has been sprayed with cooking spray.  Press a few more baking pieces onto the top of each cookie.  Bake for 10 minutes.  Repeat with remaining dough.  Makes around 2 1/2 dozen cookies.

Jenn's Notes: This cookie dough can be refrigerated overnight and baked the following day.  However,  the graham pieces and marshmallows will dissolve into the batter, so if you aren't going to bake the cookies until the following day, wait to stir in the s'mores baking pieces until you are ready to bake.

Applesauce Chocolate Chip Cookies

I first had these cookies a few years ago when my cousin's husband brought them into work.  It was the first time I had ever tasted an applesauce cookie and I was immediately a fan.

They are so light and soft and delicious.  They are a thick, cake-like, cookie full of flavor and rich chocolate chips.  The texture reminds me of a thick pumpkin cookie.

Since this recipe makes a big batch, I decided to share.  I walked over to the neighbors with a plate full of warm cookies and everyone came over to reach for a cookie, then when I said they are applesauce cookies, they immediately pulled their hands back.  I said come on just try them if you don't like them, you can throw it away.  Then, everyone took a bite and then reached for a 2nd cookie.  They loved them.

No-Bake Peanut Butter M&M Corn Flake Cookies

Last Thursday night, I saw a video on Instagram of someone making s'mores cereal treats.  I immediately craved some kind of crunchy, chewy and totally delicious cereal treat.

My friend told me about these delicious no bake corn flake treats she likes to make, then we realized it's the same recipe as these Peanut Butter Cocoa Krispie Treats, just with a different cereal and they're cookies instead of bars.
I immediately knew that is what I wanted to make, but I wanted M&M's in mine.  M&M's make everything better!  Plus chocolate and peanut butter is always a winning combo.

These cereal treats are so so so yummy.  They are chewy and have amazing flavor.  The peanut butter flavor isn't too strong and it pairs perfectly with the M&M's.

4th of July Cookies

Only a few more days until the 4th of July!  I love the 4th and I look forward to it every year. My family always has a BBQ and we make homemade vanilla ice cream topped with fresh raspberries and we light fireworks.

Speaking of fireworks . . . they are going non-stop outside my house right now . . . boom boom pop pop . . . that is all I can hear.   Do you have any fun traditions for the 4th?  Do you prefer to light your own fireworks or go out to a firework show?
Last Fall, I made these Candy Corn M&M Funfetti Cookies and I loved them.  So, of course, I needed a fun 4th of July version.

These rich and buttery cookies are soft and chewy and so dang good.  I did leave the sprinkles off one of the batches for my hubby, but he actually ended up eating the ones with sprinkles and said, "These are really good cookies."

Make sure to plan ahead, because the dough does need to chill.  I usually make my dough the night before I plan to bake them, so it's all ready to go.  These  cookies are amazing :)

I hope you all have a fun and safe holiday.
